In this rustic bread made from durum wheat regrind semolina you can find all the southern Italy food tradition. From the original Apulian recipe, the bread produced with this Nucleo® mix for bakery perfectly pairs with the strong flavours of Mediterranean cuisine: olive oil, onions, olives, tomatoes... We suggest to try it for the production of bruschetta style bread too.

How to dose our Nucleo® mixes?
To simplify the work of the artisan baker, the Nucleo® dosage is studied to always obtain 10. In this way it is possible to quickly calculate the right quantity that the baker add to the flour. This Nucleo® has a 1+9 dosage, that is: 1 kg of Nucleo® + 9 kg of flour.
