E471 and E472. These two acronyms identify the mono and diglycerides of fatty acids, that is of the agglomerates of different products, similar to the natural fat partially decomposed.
They can be of vegetable origin, but also of animal one (mainly from slaughter scrap).
Bread and bakery products usually contain E471 and E472, with the function of amalgamating the ingredients.
