Lievito Madre Italia 4% is a dried sourdough made from Italian sourdough and Italian wheat flour. Thanks to its special formulation, it ensures a more workable dough. Moreover, this natural sourdough accelerates fermentation time, which will be 30-45 minutes if compared to the standard leavening process. Lievito Madre Italia 4% gives baked goods special aromas and taste.

Lievito Madre Attivo Italia 4% has a variable dosage, according to the needs in terms of leavening duration or recipe. Dose it at 3-4% on the weight of the flour for bread and at 1-2% on the weight of the flour for pizza. For the production of croissants dose it at 2% on the weight of flour.
